Easter Carrot Cup-Cakes

Here’s a recipe for some amazingly delicious carrot cup-cakes that were a SERIOUS hit at my Easter BBQ!  I drew inspiration from the following recipe from the Food Network web site.  I was originally drawn to the recipe because of the pineapple.  The carrot cake recipe my mother has made since I was a little girl also includes pineapple and this recipe is reminiscent of that.

Just as a note, however, the pineapple can’t really be detected in the taste of the cupcakes.  It simply adds a certain sweetness and moistness to the cake.

Ingredients:

Cake

  • 1 1/2 cups grated fresh carrots
  • 1/2 cup canned crushed pineapple
  • 2 1/4 cups all-purpose flour
  • 4 teaspoons ground cinnamon
  • 1 teaspoon freshly grated nutmeg
  • 1teaspoon ground ginger
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon fine salt
  • 4 large eggs
  • 1 1/2 cups sugar
  • 1 1/4 cups canola oil
  • 1 cup of canned pumpkin puree

Icing

  • 2, 8oz packages of room temperature cream cheese
  • 1 1/2 sticks of room temperature butter (unsalted, of course)
  • 2 cups of powdered sugar
  • 2 tsps of vanilla

Directions:

  1. Pre-heat oven to 350 degrees and prepare muffin tins with 24 cupcake papers.
  2. Toss the carrots, walnuts and 1/2 cup pineapple with 3/4 cup of the flour in a small bowl and set aside.
  3. Combine dry ingredients:  1 1/2 cups flour, cinnamon, nutmeg, ginger, baking soda, baking powder and salt together in a medium bowl.
  4. In separate bowl, mix wet ingredients: beat the eggs and sugar with an electric mixer until thick and light, about 5 minutes. Gradually add the oil and canned pumpkin puree.
  5. Add the dry ingredients to the wet in 2-3 batches and mix using electric mixer.  When combined, add carrot and pineapple mixture into the batter.
  6. Pour into the prepared tins and bake for 20 minutes.  At 10 minute mark, move cupcakes on bottom rack to top rack and those on the top rack to the bottom rack for even baking.  
  7. Let cool before icing or freeze until you’re ready to eat.  

For Icing and decorations:

  1. Combine ingredients for Icing mix with electric mixer until smoother.
  2. Place in a piping bag with largest tip.
  3. Decorate as desired.  I used Peeps and malted “easter eggs.”  I also made mini cupcakes and decorated with some Easter picks.

 

 

April 13th: Gumbo Limbo 10K

Today I did a 10K with my friend Caitlin.  It was an overcast, extremely windy morning and I had one too many beers at my bbq last night but, I managed to try my best and finished without falling over, LOL.

I ran at an average pace of just under 9 minute miles and really enjoyed myself.  It was a beautiful morning and I got to spend some time with friends…. can’t beat that.  This photo was taken by Casey just as the sun was rising over the ocean.

Not a bad way to spend a Sunday morning, even if you ARE running while hung-over. :-/

April 12th: Time with Friends

Today I was able to reconnect with old friends and get to know some new ones a little better.  Although there were a few no-shows and the planning and preparing was a little hectic, I must say that my Easter BBQ was a blast.

I am blessed to have such amazing loving friends in my life and am grateful every day that I have them.  Its time like these when people take time out of their schedules or drive a long ways to spend time with you that you really feel loved and appreciate the amazingness of friendship. ❤

April 11th: Crazy Party Planning

I had all the good intentions in the world to go for a run after work Friday… Unfortunately, I over-booked myself and didn’t realize how time-consuming all the planning and preparing it would take to get ready for my Easter-themed BBQ with my friends.

That afternoon after work, I bought food, went home and started cooking and preparing…. not without a little help 😉  By around 10 pm, we had made a pretty good dent in the preparations….  Then all we had to do is drink a little wine and unwind!

April 10th: Repetitive Routes

So, for lack of time and for the sake of safety, I usually either bike or run the same 3 mile loop in my vicinity.  When I bike, of course, I end up doing the loop multiple times just to get more mileage in and try to go into different neighborhoods or down different streets to increase the mileage.

Today, I attempted to do just that… I went further down a major artery that intersects near my neighborhood and thought that this would be a good way to increase my mileage and be able to go faster for longer.  WRONG!  I ended up having to wait for cars to pass and 3 intersections and totally miscalculated the amount of traffic at the time I went out.

I’ve got to start planning a ride on my Saturday morning route by the ocean…  Perhaps Easter weekend!!

 

April 9th: Back in My Groove!!

So, not only did I get back in my groove and go for a run today, I ran a 5K at an average pace of 8:40 which for me is pretty good!!  As I mentioned in my previous article:

I want to start running regularly at an average pace of under 9 minute miles… Today’s run means that I’m well on my way!

Now, if I can only extend the length of my runs at this pace…. 😉

 

 

April 7th and 8th: Lazy Funk

I am really grateful for having had such a fun and active weekend but, to be honest, Monday and Tuesday evenings were rough!

I usually change my clothes the minute I come home from work and prepare to go out for either a run or a bike ride.  But on Monday when I walked through the door of my house, the only thing I could think to do was EAT.  I was so hungry and fatigued that I ate dinner at 4:30 pm.  I told myself that I would give myself an hour to digest my food then go for a run at 5:30…. 5:30 rolled around and I was on the couch spooning with my dog Max, fast asleep.

Tuesday evening was similar.  I had all the good intentions in the world to go for a quick run before I went out to see a Panthers Hockey Game…  That only resulted in yet another early dinner and cuddle session with my yorki-poo.

Plan for Wed… bring a bigger lunch so I’m not so hungry when I get home and don’t think so much about whether or not I want to run when I get home.  Just get dressed AND GO!

April 6th: Manically Productive ;-D

This morning, I ran 7.4 miles, did groceries for the week, cleaned up the back yard, folded a load of laundry, did some dishes and had my internet serviced by my provider all by 12:30pm….. whoa!!!!

I then managed to head over to the beach and sun bathed for an hour and a half, went to Whole Foods for some vitamins and lunch then stopped by Barnes and Nobel… Did some work, went for a short bike ride, ate dinner with mom then filed my taxes…. now I’m blogging to you!

I’m telling you… running in the morning is like winding me up. I’ve got energy to spare!

April 4th and 5th: Bike Rides, Gators and Cocktails!

This weekend has been filled with some great adventures and beautiful weather.  The bonus is that I’ve gotten some practice in with my new bike as well!!!

Saturday we visited Everglades National park and took our bikes on a nice 13 mile ride along side a very gator-saturated canal.  We lost count but are pretty sure we saw upwards of 40+ gators that day.  The park was filled with families and tourists but it was well worth the amazing ride and beautiful weather.  Check out some of the amazing wild-life we saw:

We were also privileged to see a two Kites (the birds not the toys) fly over head.  All in all, a beautiful trip.

We ended our evening with a dinner out on the town.  Time outdoors, nature, a little sun and cocktails to top it all off… Pretty much describes a perfect day if you ask me. 🙂

I Kept Going…

I don’t know if I have a cramp or a pulled muscle in my left calf but it HURRRRTTSS…

It started hurting the minute I started running this evening.  I stretched and pulled through the pain to keep running because I was doing well and was feeling great otherwise.  Although I was happy to have kept going, I’m wondering if it was kind of a stupid move because, to be honest, it now hurts me more.  I better not be in too much pain to enjoy my long run this Sunday!  Either way, I’ll still keep going during that run too… I’ll rest from running until then.

This evening I drank coconut water for the potassium and took Magnesium in case its a cramp and have massaged it and put on some Biofreeze and took a Turmeric for the inflammation…  Wish me luck :-/
