Honestly, though, there was far too much garbage on the beach today! A seagull could have choked on that. At least i got to enjoy a little warmth and sunshine after all these cloudy days. 🙂
So, I’ve been trying out my new bike this week… luckily, my sore butt issue is being resolved through my use of padded bike shorts. But, now I have a new dilemma… They make my already large booty look bigger through the addition of a big ol’ lump where the padding is, LOL… whatever.
More importantly, I’m learning to ride it slowly but surely. I didn’t realize how different it would feel from riding a regular cruiser. I’m taking short 6-7 mile rides around my neighborhood until I get comfortable riding it then plan on going further along the same ocean-side route as my Saturday long runs.
I already have several friends ready and waiting to ride with me!! 🙂 Can’t wait!
I always offer to bring something over when invited to dinner. And because I love to bake, I get really happy when I get to bring dessert! The dilemma usually is…. what to bring?!
Pies in general are easy to make and are attractive in presentation. I haven’t made a blueberry pie since last 4th of July and thought, what the heck! I read a few recipes on- line but created this one on my own. Its got my special twist.
I do have a pretty good recipe for home-made pie dough but, I’ll let you in on a little secret. The majority of the time that I make pie, I use store-bought pie crusts. When I make the dough from scratch, I make double batches. I use half and stick the other half in the freezer for future use. Yesterday, however, I had no more frozen pie dough waiting for me in my freezer so I had to buy some from my grocery store. It turned out just as yummy. Here’s how I did it.
Ingredients:
Two store bought raw pie crusts defrosted
4 cups of blueberries
3/4 cup of sugar (vanilla sugar is also great with this if you have any)
3 tbsp corn starch
1 tsp. cinnamon
pinch of salt
zest of one lemon
1 tbsp of butter cut into small cubes
optional egg wash: one egg, one tbsp water
Directions:
Preheat oven to 400 degrees. Wash and measure 4 cups of blueberries
Zest one lemon right on top of blueberries using a microplane
In a separate bowl, mix all remaining ingredients except butter. Then pour over blueberries and mix well using your hands so as not to bruise berries too much.
Pour mixture into store-bought or home made pie crust. Scatter the small dabs of butter on top.
Cut second pie crust into strips using knife or pizza cutter.
Create a lattice on top of the pie using these strips then crimp edges with a fork.
Beat one egg with a little bit of water then brush on top of pie. This egg wash is optional but gives the top of the pie a pretty shine when it comes out of the oven.
Place the pie on a sheet tray before placing in the center rack of your oven. (It’ll bubble over blueberry juice all over the floor of your oven if you don’t.)
Bake at 400 degrees for 25 minutes or until crust is golden brown. Lower heat to 275 then bake for another 30 to 35 minutes.
Enjoy with some vanilla ice cream!
For those of you who are a little freaked out about making a lattice top for your pie, here’s a super simple tutorial on youtube. The woman in the video measured the strips with a ruler but… just eye ball it guys… You’re making a pie, not conducting a science experiment. It doesn’t have to be that perfect 😉
Check out what I made from yesterday’s left-overs. I made chicken fajitas last night and decided that, for lunch, I didn’t want to eat the left-overs wrapped in a tortilla. Instead, I placed the meat and veggies over lettuce and tomato, used salsa as the dressing and voila! A healthy, low-fat and super nutritious lunch was served.
Here’s how I made yesterday’s fajitas.
Ingredients:
1 lb chicken tenderloins cut into cubes
1/2 large onion sliced
1 green bell pepper sliced
1 orange, yellow or red bell pepper sliced
garlic powder
cumin
Sazon Goya Complete Latin Seasoning Mix with Saffron
cayenne pepper
olive oil
Suggested garnish ingredients:
2% milk cheese (Mexican blend)
low fat sour cream
salsa
guacamole
shredded lettuce
diced tomato
whole wheat soft tortillas
Directions:
heat a drizzle of olive oil in large skillet and toss onions and peppers along with desired amount of seasoning until veggies are slightly tender and are a bit charred.
transfer to a plate
using same skillet, heat up another drizzle of oil and cook the cubed chicken tenderloins with desired amount of seasoning
throw both veggies and chicken together in skillet and heat through
Serve family style. Let everyone fill their whole wheat tortillas as they wish with chicken/veggie mixture and garnishes.
Today, I am grateful for a lovely new experience I had. I decided to take a yoga class this morning to fully take advantage of my time off. I had never taken a class with this specific instructor so I was a little scared when she came into the studio carrying what looked to me like a wooden brief case. For all I knew, was full of all sorts of torture devices intended to push my already tight hip flexers to their snapping point…. Despite this, however, she appeared to be very sweet and was actually very encouraging and supportive throughout the class.
At the end of the lesson, as is traditionally done, she led us through a very peaceful guided meditation. As I laid with my eyes closed and breathed deeply, I became aware of the sound of her unclasping the wooden brief case open… then suddenly, the music began.
It was a deep reverberating accordion type of sound. It played loudly, at first, then softened as she began to sing softly yet powerfully. Such an unexpected surprise. I felt so peaceful and privileged to have listened to that.
I looked up the instrument and come to find out its called a harmonium. For your listening pleasure, here is an example of what it sounded like. Its the little things…
Another over-cast and cold day…. but I had to fit another trip in. As long as its not raining, I’m going. I have to take full advantage of my time off before I have to go back to my window-less office next Monday, lol.
Today was just an all around awesome day!… It began with a long-run by the ocean with this view:
Then moved on to brunch and a walk through an art festival with this view:
Then ended with me getting a kick-ass bicycle thats very, very PINK!!!
I TOLD you that I was going to attempt triathlons this season… getting this bike is the first step.
I’m sooooooo excited that I’m seeing life through pink-colored glasses as the French chanteuse Edith Piaf once sang…. but my bike is so kick-ass that I’m channelling more Steven Tyler than Edith 😉
Let me begin by asking you something… Do I look like my mom, OR WHAT?! LOL (she can’t deny me, thats for sure.)
I had all the good intentions in the world to wake up early and do my regular early morning long run this Saturday but… when the alarm went off at 6:30 and I heard the rain falling outside I decided to cuddle up with Max a little longer and stay comfy in my bed.
It appeared to clear up a bit by 8:30 so I called my mom and did an impromptu trip to the beach. We only stayed for about 45 minutes because it got cold and rainy again (despite how sunny the sky appears to be in this picture, it was short lived.)
Not a bad way to start the weekend, though…. and to end my Saturday on a sweet note, dinner with my dad and step mom 🙂
Friday was my last day of work before spring break!!!! So, how did I celebrate? Well, by taking a very fun and productive Salsa dancing class with an adorably blue-eyed boy!!
1st class was kind of a disaster…
2nd class I spent the entire time either confused or laughing at myself for constantly turning in the wrong direction and laughing at him for getting off beat….
This 3rd class… We got this!! Oh, yeah!!
(Well, maybe we could use a few more lessons but, we’re well on our way to kinda getting through a dance without stepping on each other’s feet. Progress!!)
I am proud to say that I have been hard at work running and riding my rinky-dink bicycle lately. I have not missed a work-out except for Tuesday. I was just too tired after coming back so late Monday night from my trip out of town and wanted to give my body a rest.
My daily routine has included either a fast 3 mile run and a short cool-down bike ride OR a 6 mile bike ride and my favorite butt exercise video. I’m feeling good and am SOOO glad that I have begun to do a secondary form of cardio for various reasons:
If I run every day, my knees and hips just don’t feel right. I ache and feel uncomfortable. Cycling has given me something to do in between my running days. Extra cardio and no knee pain? What a concept!
Its helping me strengthen a different set of leg muscles which, i’m sure, will ultimately make me a stronger runner.
Its fun!
Its getting me super psyched about getting a REAL bike and doing a tri!
Despite my excitement, I have one small complaint… MY BUTT HURTS!
You would think that with my Cuban-sized booty, it wouldn’t be a sore as it is but, I’m downright uncomfortable, people. I either need to get a better seat for my bike, wear padded riding shorts or just suck it up and get used to it if I’m going to be making this a new habit!
I will be getting a more efficient bike sooner than later and will hopefully be able to try it out during my spring break! I can’t wait to share THOSE new adventures with you. Until then, I gotta keep movin’!
