Ginger Butternut Squash

On my way to the grocery store this afternoon, I called my friend Magaly to see how she was doing.  True to her energetic and endearingly quirky way of being, she went into some random tangent about a topic that was completely unrelated but interesting none the less… “How do you make squash soup?  I tried to make it the other day and it was grainy and awful!”

I gave her a quick recap on how I usually make the soup then felt instantly inspired to make and eat some myself tonight!  There are very few ingredients, it contains barely any fat and it is completely vegetarian.  Although I finished making the soup way after I had eaten my steelhead trout dinner, I filled a mug and had treated myself to some on the couch while watching tv.  I also packed myself some for lunch tomorrow.  Yum!!

Ingredients:

  • 2, 12 oz packages of frozen cooked squash
  • 3-4 carrots
  • 3-4 stalks of celery
  • 1/2 large onion or 1 small
  • 2 bay leaves
  • 1 vegetable bouillon cube
  • 1/2 tsp each of garlic powder, ginger and cinnamon
  • 1/4 tsp (or more if you like spice) red cayenne pepper
  • 1/4 tsp turmeric
  • 1/8 tsp ground nutmeg
  • (1 tbsp sugar is optional)

Directions:

The ginger and cayenne give this one a real kick.  Enjoy!

Simple Stir-Fried Sugar Snap Peas

See that?!  There’s steam comin’ off of those sugar snap peas.  They were delicious and probably the easiest side dish I could think to make.  Here’s how I did it:

Ingredients:

  • Package of Sugar Snap Peas (wash and take the fibrous tips off)
  • 1-2 tsps of olive oil
  • 2 tbsps. (or to taste) Thai fish sauce
  • 1/4 tsp garlic powder

Directions:

  1. Let the oil get hot
  2. throw in the peas fish sauce and garlic powder
  3. Stir until it gets caramelized on the outside
  4. Eat em’!!

February 19th: Dinner for One

Small victory today!  I must share that I am proud of myself for deciding not to just open up a can of garbanzo beans or tuna for dinner.  Although I cook well and have posted several healthy recipes, I must admit that I get tired and lazy sometimes after work and have been known to fix myself quick and healthy, but completely unceremonious things for dinner when I’m feeding only myself.

Today after my run, I stretched, grabbed my keys and purse then headed over to the grocery store all stinky and sweaty before I had any time to get lazy about it.  I bought myself a bunch of veggies and a piece of steelhead trout!  This delicious dinner is the result.

I simply broiled the trout the same way I prepared the salmon from my previous article (see Yumminess page) then made some sugar snap peas and farro as my sides!  Sugar snap peas recipe to follow.

I must say that preparing dinners like these for myself makes me feel like a rockstar…  Its tastier and healthier than eating out! 🙂

February 17th: My Daddy

Today (and everyday) I am grateful for my loving father.  He has always done everything possible to give me everything I need and teach me everything I needed to learn.  He has taught me to have a strong work ethic, to take pride in myself and what I bring to others, to value my intellect, to study hard, to value family and take time to relate to one another.  He has also taught me to act without malice towards others, to consider the well-being of my fellow man, to be creative, organized and structured…  I could go on forever.
No amount of words could ever describe the love he has shown me or the love I have for him in return.  (The fact that at 32 years of age I still call him Daddy says it all.)

February 16th: Declarations

As my lovely friend Madelyn (www.karmafreecooking.com) has taught me, we must declare things unto the Universe to make them so.
Having completed my workshop today, I truly understand the impact of using my words to declare the possibilities I want for my life and acting in the” here and now” to make them a reality.
Here are some of my declarations:
  • I am declaring that I understand my own worth and value the amazing person that I am.
  • I am declaring that I will run a sub 2-hour ½ marathon next season.
  • I am declaring that I will meet and marry a man who loves me for all the beautiful things that I am.
  • I am declaring that I will be a mom one day.
  • I am declaring that I will continue to travel the world (Including a trip to Europe for the Paris Marathon April 2015!)
  • I am declaring a fulfilling relationship with my loving friends and family.

February 15th: Choices

Wouldn’t it be incredible if we could choose everything we had in life?
What if even those unwanted circumstances we were dealt with were given a different meaning?  What if our personal tragedies became sources of power and strength rather than weakness, hurt and victimization?  I’m choosing to see them that way.

February 14th: Reacting to Adversity

I am thankful that God has blessed me with a beautiful life that, although not completely free of hurt and adversity, is both wonderful and beautiful.  I’ve never been one to victimize myself, even when faced with unpleasant circumstances, but I know that I can always re-evaluate and improve upon myself…  Today I started an amazing three day forum through which to learn how to live a more engaged and meaningful life. I’ll admit to being a bit confused today but I have been receptive to learning. ❤

February 13th: Golf Umbrellas and Hot Messes

So, I woke up Thursday morning assuming that it was going to be freezing out because everyone was claiming that it was going to get colder over night.  I wore boots and a sweater but realized after I headed out the door that it was still warm but there were some serious clouds coming in…

By the time I got to school, the rain was falling sideways and with a vengeance outside and I had the wonderful task of doing car pool duty (as I do everyday) at my school…  After about half an hour of helping kids out of their cars in the pouring rain with a small umbrella, a kind mother got down and gave me her huge golf umbrella to use for my remainder of my time there.  Make a long story short, despite her kindness, by the time I was finished I was soaked to the bone and kinda looked like a crazy person.  Evidence below:

I came into work with my hair straight but I walked around with it curly like this, LOL.  And in the kind words of a friend… “It may be a hot mess, but at least it looks hot.”  Bonus! 🙂
