J’aime Les Oeufs

The French have an obsession with eggs.  It might not be as high up in the ranks as butter, wine and stinky cheese but, trust me, eggs are up there.  In quiches, omelets, deep yellow brioche breads or served sunny side up with asparagus for dipping, the French love it all.  And in recent years, I too have developed a liaison amoureuse with these suckers.

Besides the olfactory hallucinations I have of brewed coffee while on my weekend morning long runs, the second thing I begin to crave several miles in are my over-easy eggs and rye toast. I questioned whether this was even a healthy thing for me to indulge myself in every weekend as I’ve heard that eggs can raise your cholesterol.  The good news is that there’s TONS of research that shows that eggs are actually an extremely healthy, whole food and its not an “indulgence” at all.

Quick-Fix HEALTHY Huevos Rancheros

As I’ve said before, I’m a creature of habit.  And that could not be more true than in the way I eat.  On a day to day basis I will have a green superfoods/ protein powder shake and a peanut butter granola bar for breakfast.  Its easy, its fast and its portable.

Thats fine while I’m at work and need to sip and eat between putting out fires with kids or co-workers but, sometimes, on days off I just need to eat real food.  Last Tuesday after a long bike ride, I came home with a hankering for some real breakfast but I wanted to still eat healthily.  Here’s what I came up with using 3 simple ingredients I had in my fridge. The results were delicious and totally crave-able.

Ingredients:

2 eggs, fresh salsa and some arugula

So, once again, I went on my 7 mile run this morning.  Only this time, I met up with my friend Samantha for a bike ride afterwards!  We had such a blast riding through a trail I had never done before.  We enjoyed seeing cool iguanas and turtles, did some strange people watching and, of course, had some awesome girl-talk time.  What a great way to end the weekend!  Actually… what a great way to start my Sunday!  A reverse brick workout, LOL.  Now, I gotta start getting serious about cycling and running back to back… but in the correct order.

After Samantha and I finished having a yummy breakfast, I took my bike to the shop to get it serviced, have the handle bars re-taped and buy some road pedals and cycling shoes. I’m looking pretty legit now on that bike, LOL 😉  Ready for my months of training ahead.  Gonna be awesome!

 

March 29th: Blueberry Pancakes and Mystery Gardening

Today i started my morning by making my first-ever batch of blueberry pancakes.  While they weren’t the best pancakes I’ve ever eaten,  they certainly weren’t the worst.  And, they were beautiful if I don’t say so myself… 🙂

After breakfast, I got a SURGE of energy and was on a mission to do gardening and housework before the end of my weekend… Work starts again on Monday!  I started in the garden by cleaning up some fallen palm fronds and finding some bulbs in the bushes…  One of the bulbs had sprouted some serious roots despite not being in the soil and the other was just beginning to grow.  I decided to tie one to a palm and plant the other…. Lets see what they become!  LOL

I also managed to salvage the last of my Aunt’s orchid.  She sprouted three babies that were beginning to wilt because the mother plant has died and begun to dry out.  I cut the babies off the mother plant and tied them to palms in my yard as well.  Next year my yard is going to be VERY colorful.  Can’t wait!
